Tywardreath Butchers is Game-to-Eat’s December Butcher of the Month. Andrew and Sue stock a varied selection of local game and even make their own “Shooter’s Sausage” from mixed game.
- What type/cuts of game do you sell? What tends to be the most popular venison, partridge, pheasant?
Pheasant, partridge, mallard, pigeon, rabbit and venison. Woodcock and snipe when available. The most popular are pheasant and venison. - Is game a popular choice with consumers - do you get a demand for it when then season begins?
Game is popular but needs to be displayed. The market grows each season with work. - Is the fact that game is seasonal a positive factor?
Can be positive. We use the start of the season for menu changes at local restaurants. - Do you further process game e.g. make pies or sausages?
We make a “Shooter’s Sausage” from game. Also venison burgers and sausages. - Where do you get your game from?
All locally shot. I shoot myself so most game is from our shoot. Everything is Cornish. - Do you highlight the source of the game e.g. Pheasant from New Forest, Grouse from North Yorkshire Moors?
Yes. We stay within the county wherever possible - Do you offer customers recipes and serving suggestions for your game products?
We have found the Game-to-Eat recipe booklets very popular with customers - As a butcher what is your favourite game meat?
Venison
