Our restaurant of the month, The Brown Horse of Winster, is a charming rustic country inn with rooms, south of Lake Windemere.

Head chef Paul Webster’s restaurant menu offers a contemporary take on traditional local fare with a huge emphasis on game. All the game comes from their own Brown Horse estate which means they are able to control the quality and ensure the meat is at its best. The fantastic building also includes a farm shop and The Brown Horse is even in the process of launching its own micro brewery. We’ll drink to that!

    Roasted new season Winster pheasant breast & slow braised leg, bread sauce, carrot & Swede, confit potatoes. A classic dish which showcases the birds original flavour.

    >Coniston Bluebird bitter

  4. What types of game are served on the menu?
    Pheasant, mallard, quail, duck, partridge, teal and woodcock.

    Yes, most customers do normally get the chance to try game, so people try it as a novelty as well as locals and game connoisseurs.

  6. Where do you get your game from?
    We are lucky enough to have our own estate and a shoot, which is in Winster itself. The birds are shot, hung, prepared, cooked and served.

  7. What is your signature dish on the menu?
    Duck four ways - Roasted breast, duck toast, braised neck & sautéed liver with sweet gratin, caramelised turnip, girolles and walnut bouillon.

  8. Is that fact that game is a seasonal dish a positive factor?
    Yes of course, seasonal produce is key to a successful kitchen.
